Could anyone explain the use of 'nous' in the second example but not in the first. I would see the constructions as similar.

Is the use of 'nous' in these cases optional?

What Chris says is true, but I don't think it's what's happening here. The verb is s'aventurer so this is just the reflexive pronoun.

Yes, it's optional. In French the subject is often doubled with the pronoun after an explicit enumeration. Considering the sentence more closely (after Alan's remark), the nous here is indeed the reflexive pronoun. The sentence would not work without it.
